I am using pfSense 2.5.2 CE but in order to use the update/package management features I need to go out to the internet via a proxy. This proxy has SSL interception enabled and hence I need pfSense to trust this certificate. How to I import the proxy SSL interception certificate to the appliance for this purpose?

You should be able to do that by importing the CA cert in the cert manager and checking the 'Trust Store' box so the OS can use it.
