What NICs do you have?
Check Status > Interfaces, do you see errors on any of them?

NICs. not sure, it was an aliexpress mini pc, would it tell me in bios? there was nothing on the listing page but a few of the reviews said it was fine with PfSense

can't see any errors on Status > Interfaces

Just two i226 NICs? If it's 4 you could try swapping them to check for a hardware issue.
What is the WAN actually connected to?

Haven't forgotten about this! sorry for the slow reply, just haven't had time to test yet
It's got 4 NICS plus another port called COM, not sure what that one is, the others are labelled as normal ETH0, ETH1 etc. Will test the ports tomorrow evening, and the WAN is connected to an ONT(?) device which seems to be having trouble communicating with the PfSense box, its got a Data light on the box that usually flashes yellow for a minute or so while it's setting up and then goes green. It did this when I connected the ISP-provided router and also when I connected directly to it with my PC when I was testing something else. However, when connected to PfSense it just stays in that setup mode and never goes green.

@zapp8rannigan It doesn't sound like it should be the MAC that is the issue, since you say it works "for a while". But it might still be worth testing...
Look at the ISP provided router and the MAC that it has, and put that at the MAC Address entry for your WAN interface. That way your pfsense will present itself as if it was the ISP router...

Ok,
So tried a few things...seems to be working okay (at the moment). So I changed the mac address to be the same as suggested by @Gblenn and I have also swapped back to the ISP-provided DNS servers (was using Cloudflare)
I also added a fan to my n100 box as it was getting hot! but I'm guessing that would have been a separate issue.
Oddly I tried using different ports on my box as suggested by @stephenw10 but couldn't get them to autodetect.. I am starting to think this box might be dodgy, which is annoying as the reviews were pretty positive except for the overheating.
It's still not "communicating" fully with the ONT the ISP installed (yellow data light, which should be green) but it's still getting the correct speed for now.

Have to know exactly what that green LED means really. It could be the link speed which would be an issue and can be a problem with i225/i226 NICs.

all I know is Yellow means setup mode, green means it passed setup mode.
Upload speeds are starting to tank a bit, coming in at approx 200Mbps at the moment according to a speed test, though someone is streaming from my plex currently (480p) it was around 800-900Mbps yesterday can't imagine one 480p stream would tank it that much?

When you're testing max throughput any other connections can cause a significantly lower result. It's not necessarily using the other 600Mbps.

well its completely tanked again now just slowly got worse over several days. Going to try running it from a vm on my unraid server at least that way i can rule out the hardware
