      From one of the first updates after installing the alpha (fresh install was the one from 11/14/09) the menu changed to white, so nearly nothing to see.

      Does anyone know how to get rid of this and change the color back? (Maybe some missing things?)

        Looks like it isn't loading the background image for the menu for some reason.

        You might try going to System > General Setup and reselect the theme as pfsense_ng.
