Nightmare with PfSense Upgrade

I upgraded PfSense to 2.7.2 when it came out. Everything was fine then I made a mistake. I tried the new DHCP. Thought it was working fine but it wasn't and stopped issuing settings. Then I made some other tweaks and one system stopped resolving domains, followed by others. As it took several days I had forgotten about the DHCP change and stupidly I tried to fix it screwing it up completely.
So decided to rebuild and hit my first issue the new install process which took me a while to work around as I have a headless box for PfSense. So installed the latest and greatest 2.7.2 and restored my backup. I found I wasn't getting DNS and went back to the working DHCP server. Then I go Packages Unavailable and refused all external access. After several rebuilds I had to reinstall and build it up again from my paper records. Still had the package issue on 2.7.2.
So went back to my old version 2.5.2 and everything was fine. Upgraded to 2.7.2 and manually rebuilt again. This time it all worked.
So it taken me some time to fix it so I won't be playing again but any ideas why I can only think of one reason, the new installer forces me online downloading an image whilst the consistent old image on a USB doesn't. Not happy with that and don't see any reason why the images have been removed. I have to type all my PPPoE settings in and when done I still have to do them again. However, nobody else seems to have this issue so any ideas? Just to be clear a fresh install of 2.7.2 and I can get interweb access but the Available Packages is unable to read the data. No other changes made.
It's had me tearing my hair out and I can't afford to lose any more.

Do you have any logs from the point where it failed?
Or if you can replicate try cheking for pkgs at the command line with:
pfSense-repoc -D
or
pkg-static -d update

@stephenw10 Thank you for the reply and the pointer to the images. That is the area where I downloaded the images that worked.
I don't have any logs as it didn't fail in the normal way. What happened is that it was almost like reflection was turned off with just no responses and the Package section just said unable to retrieve package.
I'm leaning towards 'It must be me' Nobody else seems to have hit this issue and yet there is little that I could have done wrong.
Originally a perfectly working system. I made a mistake and screwed it up because I was stupid and didn't follow my own rules. Lost the backups but as I document everything I had every setting that was needed as well as some config backups. Just a lot of typing.
Copied Installer from site, wrote to USB drive. Booted. Following instructions as per normal. Connects to your site, as I'm using my CE version it sees I don't have a plus account and offers CE. Finishes and I reboot and configure the system again. Works OK but no incoming connections allowed which is the default which I change to PureNAT for my system. I then set up my DNS and DHCP entries, my firewall links etc. and at some stage during the config changes the external access fails and the Package Manager fails to update. Sometime it is quick and other times after I have restored it all. I originally used the backups, then selecting DNS etc. from the backups. At some stage it just stops.
Installing from the base images it works fine. I installed 2.7.2 from that link you provided and have rebuilt it completely and it is fine.It makes no sense. However, I don't want to waste your time so I'm going to leave it as it is as I am now behind on some work I need to do. Let's put it down to user error and let's see what happens at the next upgrade.
