Hey

We have 2 x Dell R210 with 6 x 1Gbit Nics.

Should we LAGG two interfaces and connect the nye LAGG-interface to two diffrent switches or is CARP between the two servers enough (Server1 connected to switch 1 and server2 connected to switch 2) to get a fail-safe setup?

CARP generally enough, it'll protect you from the same things lagg would additionally.
