I updated an installation and rewrote the config from scratch. I noticed in the backup (so I could compare with the last working one on an earlier version) that the version is now "7.5" instaed of 7.0. I see a lot of CDATA tags in the backups, but I don;t know what the difference is with 7.0 and 7.5. The backups seems larger is all.

I also notice if I do a port forwarding to a host that it shows in states CLOSED, but never forwards like it should, it a a multiwan server for outbound load balancing (which does seem to work), but the inbound NAT for some entries does not seem to get past the firewall, even though the rule is there.

The only differences in the config there should be some CDATA protection on description fields for various parts of the config. That shouldn't affect NAT.

There are already some other threads for multi-wan NAT issues on current snapshots, check into them and see if your problem is similar.
