We have over 3 years worth of access logs recorded. 'Log Rotate' was blank so that it would keep all of the logs. A management decision was made to keep only 180 days worth of data. I changed the log rotate to 180 and saved, but the access logs older than 180 days are still available. Do I need to delete the old logs from the command line or will they remove themselves at some point?

That setting isn't likely to do what you want. Setting it that way will rotate the logs once every 180 days. So every 180 days the log would be rotated and you'd have no data in the current log at that point.

I'm trying to configure it so that only the last 180 days of access logs are available at any given time. Currently, we have over 3 years worth. What settings would I need to change to accomplish that?

Have you found a solution to this?  I am trying to figure out how to control how much history is analyzed by lightsquid?  Not sure whether to leave the log rotato variable in squid blank, etc.  Thanks.
