Hi I was wondering what the best way would be to set up the ability to dial into a pfsense machine or the network with a 56k modem in case of a network problem?

An external modem connected to a serial console port with auto answer would do it. Dial it with a terminal emulator like the old hyper terminal and away you go. You'll be limited to just the firewall though and can only do things you can do from the console but for an emergency reboot method that's all you need (better than going onsite, especially if it's some distance away).

What Joel described, though you'll also need to enable the serial console under System>Advanced.
