I know Pound can do this for HTTP traffic, but is there a way to do this for other traffic?

For instance I host several game servers and rather than running them on nonstandard ports I'd like the router to determine the hostname the client is attempting to connect to

gameserver1.domain.com forwards to server1 on the lan
gameserver2.domain.com forwards to server2 on the lan

      remotely possible?

No - you'd need multiple WAN IP addresses.

There are proxy packages that can do this, I believe the mod_security package is one of them, but I'm not sure if it's currently working or not.
