This question will probably seem stupid to those of you who are well versed in BSD and similar operating systems, but if I add a second processor to my current setup (Dell Poweredge 300SC, currently a single 800 MHz PIII), will that require reinstallation of pfsense?

I ask because I have a small amount of experience with Linux, and I remember that in the past (although I have no idea if this is still true), a different kernel was used for SMP systems.

The kernel has support for SMP enabled by default so it should make use of it as soon as one is detected. Reinstallation is not required.
