I am interested in putting a firewall on a VM, to setup a virtual test lab in our VMWare environment. All of the physical NICs are Gbit. Will pfSense give me Gbit speeds for traffic passing through it? This is similar to a DMZ, but completely internal to the network where the entire network is Gbit. Or do I risk spiking the CPU usage on my VMWare servers?

Something has to do the work, so of course your CPU usage is going to increase.  Whether or not you can push Gig-E speeds depends on the hardware in question.  There are a couple people here doing 4-5Gbit/s through VMs.

        I can break anything.

Yes, you can push a full gig through pfsense, i do it all the time. I believe it is recommended that you have at least a 3Ghz CPU.

Recommended but not required.  I think those numbers were based on Netburst cores.
