What is the point of this if running my own resolver on my own local network?  Pretty sure I trust my connection to it ;)

If your local resolver hasn't cached an entry for something requested from a host on your network, it will have to make a request to an upstream DNS server - which if you want to keep those requests private, you would want to encrypt.

Said another way, if you have a local resolver, it has to get it's records from somewhere else, and the requests to somewhere else are what you would be encrypting.

Who are you hiding this traffic from?  Your isp.. Well just use a vpn and now your resolvers queries to its authoritative servers would not be seen by your isp.
