Internet speed slows until everything is blocked.

I'm experiencing a strange issue that I am not exactly sure what the cause is. I'm currently on ATT Uverse fiber for internet and unfortunately have to use their modem which is also a Wi-Fi router. I'm also running my home built pfsense box which is connect next in line after the Uverse router. Now, I'm not normally accustomed connecting a router to a router but since I'm stuck with my ISP's hardware, I have no choice. Their router spits out the generic private IP address and I set my box to DHCP a 192.168.0.xx series of addresses. I've also configured Snort and PFblockerNG as well. When I first get it all setup, everything will run fine for a day or two then the internet slow to a crawl by day three, no traffic can get through. If I reboot the pfsense box, the internet works well for about 30 minutes than is stops all together.
Could this possibly be related to the address range I'm giving or the fact that I'm having to connect router to router? Additionally, with U-verse, there is two modems. One is on the exterior and it receives the fiber connection and have a 4 port built in switch. From there, it goes of CAT6 to the inside router. I wish I could turn off the NAT in the Uverse router but there is no option to. Plus, I find myself wondering if I could connect my router to the modem that's on the exterior of my home?
Anyone have some expertise to add?

Here is a little more detail about the issue. When digging into it, I find that my logs are getting full quickly and even though I have them all set to maximum size, they still fill up and traffic stops. Once I go through them all and clear them, the internet flows as expected.
Is there a way to have pfsense completely stop writing logs? I'm a home user. I don't really care to go and review logs if I don't need to unless they are of extreme importance. I just want this things to do what it does while being largely on cruise control.

Which logs? Are you referring to firewall logs, Snort logs, what? From the information you've provided, I'd say you either need a bigger hard drive or you need to remove any packages which are filling up your drive space.

Yeah I am curious what logs as well.. What do you mean you have them set to maxium size?? There is no setting in pfsense gui for log size that I can recall. You can set how many lines of the log to display..
What are these logs filling up with?? Noise? Maybe look to reducing the noise logged, or just plain reducing the noise its seeing by fixing whatever is causing the noise.
What else are you running on pfsense - what packages?
