Should I rather buy an already made build? What about 2440, 4860, or 8860?

No it is a good and new one.

The 4860 and 8860 would be really rocking for sure, and you are able to add a modem, mSATA
and/or WiFi card inside, pfSense comes pre installed and is ready tuned as a "ready to go" solution. -

By very liquid, I think he means "smooth, running without a hitch".
He is German, so I suspect it is a saying that doesn't translate well.

This depends on the installed packets, offered services and the entire set up or configuration
you are running, and reading between the lines, I suggest for you with the services and packets
and on top the entire needed or wished throughput named in your first post that the SG4860 or

You can not compare directly cpu cores against! because a Xeon E3 CPU core is not the same
as an Intel i3 or i5 Core and surely not the same as an Atom CPU core! -

I really don´t know it! But the Celeron G3260T is able to push 1 GBit/s at the WAN interface and also able to
run snort flawless. -
