Do you see a crash report when it boots back up?

Any errors in the system log?

If you can connect to the serial console and log its output. That might show something when nothing else does.

Hmm, OK you don't see anything before 12.05? The log entries running up to the reboot are more likely to show the issue.

Are you running /var as a ram disk possibly?

And crash reports would be in /var/crash if you only have ssh access but if /var is a ram disk they will not be present.
