I'd expect 8125 NICs to work fine. Support for those is in 1.98.

I created a boot usb drive. Once I turned the 5100 on with that in, I was able to re-install with zfs and eventually apply my config xml.

@stephenw10 probably, I'm not super knowledgeable on how this stuff works in the back end. It does make sense that its a driver limitation, or maybe bug? Either way its nice that autoselect works as it should. Can't wait to get my other cards in and top out my provisioned speed. I can see when running a speed test it maxes out my 1Gbe nic in my desktop 😂

After a few USB re-plugs and restarts of pfSense it finally figure it out and started working.

Try these. I can't test them against hardware but they load fine in 2.5.2:
